01 Feb Chicken Pie!!!

Well it’s Monday here and we are off to a busy, but good, start this week.

I have another quick no-recipe recipe for you again today…Chicken Pie!! Mmmmmmmm…..

This is always a big hit in our house. For ALL FIVE of us. That pretty much makes this a super food in my books.

Chicken Pie


Chicken!! (I used thighs but feel free to chuck in whatever body part you please)

Onion – chopped

Carrot (maybe 2 or 3 depending on size) – chopped

Broccoli – chopped

Whatever other veggie you would like to add (peas and corn are good)

Plain flour

Chicken stock




Sweet potatoe


Cottage cheese



Ok. Chop up your chicken into smallish pieces and brown off in a little olive oil.

Now throw in your onion, cook a minute or two, then toss in the garlic and all your other veggies (minus the potatoe and sweet potatoe) Cook for another few minutes. Oh and you can throw in your thyme now too. (I just used dried. Gasp!!!)

Sprinkle in approx 2 tablespoons of plain flour and make sure it’s all stirred through. Then throw in the chicken stock – about 2 cups and stir. It should start thickening due to the flour. Just keep watching it and add more liquid if it seems too thick. You don’t want it too runny though, just a nice thick sauce. Lastly plop in a couple of spoonfuls of cottage cheese and stir through.

In the meantime…you can peel, chop and cook your spuds. You really can use just all white potatoe or vice versa with the sweet, I just find this to be a nice combo.

Once they are cooked give them a mash just the same as you would making mashed potatoe.

NOW…grab yourself an oven proof casseroley type dish, give it a rough grease, then pour in your scrummy chicken and veggie mixture. Spoon the potatoe mash on top and spread about to cover completely.

Pop in the oven for around 15-20 mins at about 180 degrees.

Admittedly this may not be the most gourmet or attractive dish going around but it IS definitely tasty, healthy and kid proof. Which in my book is called WINNING!!

    Looks yum! I’m a devotte of your recipes Janelle. I love that you use ingredients most of us would have on hand – that you don’t shun sugar in baking but do reduce it – a tip I have started with my own favourites . I’ll be giving this whirl when it cools off a bit here in sunny humid Bris-Vegas😂
