19 Oct Vanilla Cake
So we are meeting up in the kitchen today..surprise surprise..coz i need..NEED!!!..to share this easy-as basic vanilla cake recipe with you all! I call this my homemade-packet-mix cake…as in it’s as easy as throwing together a packet mix but you are actually using REAL ingredients from your own pantry with none of the nasty numbers etc added.
This is my staple go-to cake for birthday parties, arvo teas, last minute oops-I-forgot-about-that -event/party/stall type thing, and it’s even fab for introducing your kids to baking as it’s basically standing back and throwing ingredients at your mixer bowl, turning the mixer on, and pouring the mixture into a baking tin. Honestly.
And the VERY best thing about this little beauty is it’s pretty much fail-safe!! Really…it works out beautifully every.single.time.
So let’s grab those stylish funky aprons and get our bake on shall we…..
60 grams butter – melted
1/2 cup sugar (I often use raw)
1 cup SR flour – sifted
1 tablspn cornflour
1 tablspn custard powder
1/2 teasp vanilla extract
1/2 cup milk
Heat your oven to 180 degrees
Throw all your ingredients into your mixer bowl
Leave it mix for about 4-5 minutes
Pour mixture into a greased and lined baking tin (mine is usually a 20cm round tin)
Bake for 40-45 minutes
Allow to cool in the tin for 5 or so minutes and then tip out onto your cooling rack to cool off completely
Ice when cool.
Here I’ve obvs used a chocolate icing then sprinkled with coconut flakes. Kinda like a lamington on steroids?!! But you can use whatever flavour/colour/type of icing you fancy.
I’ll be doing a little icing series soon too so that may help with any icing issues (is that really such a thing?!!? Actually more than likely is…) that may arise!!
